5 - 8 ripe tomatillos, husked and washed
1 serrano pepper and/or 3 jalepenos (seeded or deveined depending on your desired heat level)
1 large ripe avocado
1/2 bunch of cilantro
2 limes
Salt/Pepper (For this I like to use white pepper if I have it)
Combine tomatillos, pepper(s) of choice, avocado and cilantro into a food processor. Squeze the juice from the limes in and blend until smooth and creamy. Salt/Pepper to taste.
Makes about 3 cups.
BONUS: This can be served over anything to be honest. It is that good. With eggs, as shown, over barbacoa pork or chicken, used in tacos, or even just with chips.
