Based on the reciepe from "The Joy of Cooking" - my mom's cookbook...
2 pounds of potatoes
6 slices of bacon (I prefer Wright Brand bacon)
1 white onion, cut in a thick dice
1 ¼ tablespoon white sugar
½ cup white vinegar
1 tablespoon white flour
Salt & Pepper to taste
Chopped Parsley, as garnish
Boil potatoes. When finished, cube or slice to a fairly good size. These are the star of the show.
While potatoes are boiling, start to cook the bacon in a large, deep pot (like a soup pot) until crisp. Remove from pot and slice about 1" wide. In the remaining grease, add the chopped onion. Once cooked down, return the bacon to the pot and add the flour, sugar and vinegar and bring to a boil. Fold in the cooked and sliced potatoes until mixed thoroughly. Add salt and pepper.
Serve warm with parsley as a garnish.
